Who knew farro was SO DELICIOUS?!
Check out this vegan southwest salad recipe I developed featuring farro from Flourist, Canada's only 100% traceable grains, beans and freshly milled flours.
INGREDIENTS: (everything available at SPUD.ca):
1 cup farro
1/2 head shredded cabbage
1 can black beans
1 can corn
1 sliced orange/red pepper
1 minced bunch cilantro
1 package Frontera green chile enchilada sauce
INSTRUCTIONS:
Cook farro according to package instructions
Mix everything together, drizzle with hot sauce, then eat!
The longer it sits the better the flavour so try to prepare at least 15 minutes ahead of time
